Rasht, the capital of Gilan province near the Caspian Sea in Iran, was recognized by UNESCO as one of the most suitable places in the world in terms of cookery for the value of its food culture, and thus was included into UNESCO Creative City Network for its unique gastronomy, which means the art of cooking delicious food. UNESCO Creative City Network is comprised of 47 cities from 33 countries in seven fields, including music, literature, crafts and folk art, gastronomy, design, film and media arts.

As a worthwhile cultural heritage, food and cooking traditions of a region including their eating habits and customs represent the identity of the local people inhabiting that region; therefore, UNESCO decided to appreciate and maintain the local cuisines in the world, and these unique culinary methods and typical dishes were considered as a World Heritage Site.

Torshi Tareh is a delicious stew that does not require meat, but it is nutrient and tasty; it is made from vegetables, rice, bitter orange juice, garlic, and eggs.
